Tiramisu literally means 'pick me up' in Italian.<\/p><p>Espresso flavoured, made of coffee dipped ladyfingers with sweetened mascarpone cream, it's creamy richness is decadent yet light. The perfect way to end a meal!<\/p><p><strong>Serving size<\/strong>: <\/p><p>Serves 12<\/p><p><strong>Ingredients:<\/strong><\/p><ul><li><p>3 large egg yolks, cold<\/p><\/li><li><p>1 cup unpacked powdered sugar, sifted<\/p><\/li><li><p>2 1\/4 cups full-fat mascarpone, cold<\/p><\/li><li><p>27-36 Italian ladyfingers (hard ones)<\/p><\/li><li><p>1\/2 cup cooled brewed espresso or strong coffee<\/p><\/li><li><p>2 tablespoons unsweetened cocoa powder<\/p><\/li><li><p>coffee liqueur (optional) <\/p><p><\/p><\/li><\/ul><p><strong>Please note<\/strong><span style=\"font-family:Lato, sans-serif;\">: traditionally alcohol isn\u2019t added but it can help to elevate the flavour. You can add a splash of coffee liqueur, or substitute with Amaretto, dark rum, Marsala, brandy or even <\/span><span style=\"font-family:'-apple-system', 'system-ui', BlinkMacSystemFont, 'Segoe UI', Helvetica, Arial, sans-serif, 'Apple Color Emoji', 'Segoe UI Emoji', 'Segoe UI Symbol';\">Frangelico. <\/span><\/p><p><strong>Method:<\/strong><\/p><p>1. In a large bowl, using an electric mixer fitter with a whisk attachment, beat the egg yolks and powdered sugar on medium-high speed until creamy and the sugar is completely dissolved (2 to 3 minutes).<\/p><p>2. Add the mascarpone and mix on medium speed just until smooth and creamy, about 1 minute.<\/p><p>3. Mix together the espresso and choice of alcohol (is using) in a shallow bowl and quickly dip the lady fingers (2 seconds max) on each side to soak up the liquid. Be careful not to dip for too long as they will become soggy.<\/p><p>4. Lay the ladyfingers in a glass or ceramic dish until you have one even layer. You can split some ladyfingers to fit your dish if needed.<\/p><p>5. Next, add half of the mascarpone mixture over the biscuits and spread out in an even layer.<\/p><p>6. Continue with another layer of ladyfingers and mascarpone as directed above. Finally, dust with cocoa powder and chill in the fridge for roughly 6-8 hours.<\/p><p><strong>For best results, leave in the refrigerator overnight before serving to give the flavours a chance to develop fully.<\/strong><\/p><p><strong>\ud83d\udca1Behind the recipe <\/strong><span style=\"font-family:Lato, sans-serif;\">by Co-Founder Manuel<\/span><\/p><p>Moving to Italy without speaking the language was always going to be difficult. My mother did an amazing job of navigating the cultural nuances and how to deal with situations like locals frequently peering into her shopping cart unabashedly to see what she could possibly be buying.<\/p><p>She turned those moments into learning opportunities, asking what sauce to make tonight, or what new dish to attempt at home. This resulted in a deeper connection to the Italian lifestyle and occasionally a word for word recipe passed down by generations from a virtual stranger.
